We offer a wide selection of authentic Indian recipes for those seeking a traditional dining experience, as well as contemporary fusion dishes for those with an adventurous palate.   Indian Cuisine Primer

 

India is a culturally diverse and geographically-large nation 1 /3 the size of the United States. It is comprised of numerous states and regions, each with its own languages and native cuisines. Historically, the Indian people have been very health conscious and have made use of the many beneficial herbs and spices which grow in their country. These spices are used extensively in a wide variety of recipes, ranging from simple bean and rice dishes to elaborate dining of the highest caliber.

 

The layering of various spice combinations is an art, and many dishes are designed to complement one another. For example, the soothing yogurt of raita and cleanses the palate and provides contrast when coupled with spicy entrees. Each spice is used with purpose, enhancing and balancing ingredients to create the perfect meal.

BIRYANI - (bur-YAW-nee) A traditional celebration meal in India, where

vegetables or meat are cooked in a sealed pot with rice, making it very flavorful

and aromatic

CHUTNEY - (CHUT-nee) A sweet or spicy condiment, similar to a salsa or relish

Dosa (DO-suh) A thin and crispy crepe made from rice flour and lentils,

which may be stuffed with various fillings

KoR MA - (CORE-muh) A type of mild curry dish, traditionally made with

yoghurt, cream and nuts

MASALA (111111-SAWL-1111) A pre-made mixture of ground spices used for

flavoring thods

PANEER - (puh-NEER) Homemade Indian cottage cheese

ROGAN JOSH (RO-gan JAWSH) Rogan means clarified butter in Farsi. Josh
